Brazilian coffee is a classic and the absolute primal cause of every espresso blend at HAYB - what would we do without it? Not so good coffee for sure!
15 kilometers east of Patrocinio, Brazil, you'll find a collection of farms and plantations that are unique in their way. The soil here is different: full of nutrients and abundant in extraordinary minerals, all of these crops are found in the crater of a dormant volcano, called Chapadão de Ferro by the natives, which translates as "Iron Plateau".
Unique soil factors are combined with warm and humid summers and mild and dry winters. The natural factor alone is not enough to produce high-quality coffee, it is important to what man will do with it. The ripe coffee fruit is harvested and sorted, then left to dry in the Brazilian sunshine on a large, purpose-built patio. After reaching the ideal moisture level, the grains are segregated a second time.
